Lavender Harvest | Lavender Distillates | What are floral waters?

The lavender stems are trimmed to remove much of the stalk.
Only buds are used in the distillation process to give us the highest quality oil and floral water.

The large portable still allows us to do 50 lbs at a time.

As the distillate is captured it settles into two liquid phases with the oil layered on the top.
The lower phase is the floral water.

The two phases are carefully collected as pure oil and floral water which contains about 15% essential oil.
